Acrescente a rabada e o tomate e cozinhe. Tempere com sal, pimenta, salsinha e
cebolinha e deixe em fogo brando para apurar e mesclar os sabores. Na hora de

manteiga e no óleo, acrescente o tomate e refogue. Adicione a maçã e cozinhe. Junte a farinha de
milho e mexa até incorporar bem. Tempere. Abra o lombo e espalhe uma porção de
farofa em toda a superfície. Enrole e amarre. Unte uma assadeira com o azeite,
coloque o lombo e espalhe sobre ele a manteiga. Cubra com papel de alumínio.
